Yes. This batch of Oscietra was tinned on 23 October 2026 and carries a use-by of 23 February 2027. Every tin is unpasteurised and has never been frozen. It rests in our Sydney cold room at 0 to 4 degrees. With ★ Refrigerated Courier it travels in refrigerated trucks all the way to your door, and same-day and Express Delivery orders leave in isothermal packaging with ice packs and never sit over a weekend.

Arrives perfect or it is free. A FreshTag rides in every order and tracks the temperature all the way to your door. Green or yellow means it arrived perfect. If yours shows orange or red, or anything else is not right, send a photo with your order number within 24 hours to bump@khaviyar.com.au or 0430 083 914 and we replace your order free. Caviar is perishable, so we cannot accept returns once it is delivered. Please be home for delivery, or have someone ready to put it in the fridge.

Yes. Our Oscietra is Acipenser gueldenstaedtii, the Russian sturgeon, from CITES-registered aquaculture farms. The species and the CITES code are printed on the back of every tin.

Our sturgeon are raised in sustainable aquaculture farms, primarily in China, and every batch is CITES certified. The tins are graded, labelled and dispatched from our cold room in Banksmeadow, Sydney.
